Ingredients

White Bean Soup:

  • 1 pound dry white beans (cannellini or great northern)
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon dried Italian seasoning blend
  • 4 garlic cloves, chopped
  • 2 bay leaves
  • 8 cups vegetable broth
  • 4-6 cups chopped kale
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red chili pepper flakes (optional)

Instructions

  1. Soak the Beans: Place white beans in a large pot, cover with water, and soak for 6 hours or overnight. Drain and set aside.
  2. Sauté Vegetables: In a Dutch oven, sauté onion, carrot, celery, thyme, and Italian seasoning in olive oil for 10 minutes. Add garlic and sauté for another minute.
  3. Cook Soup: Add broth and soaked beans to the pot. Simmer covered for 45 minutes. Add kale, salt, pepper, and red pepper flakes. Cook until kale is tender.
  4. Serve: Garnish with more red pepper flakes if desired. Enjoy!
