Ingredients

Instructions

  1. Season the tomatoes. Preheat the oven to 400°F (200°C). Place the cherry tomatoes on a small baking sheet. Drizzle with 2 tablespoons of extra-virgin olive oil, then sprinkle with 1 teaspoon Italian seasoning, kosher salt, and ground black pepper to taste. Toss gently to coat all the tomatoes evenly.
  2. Roast the tomatoes. Roast in the preheated oven for 20 to 25 minutes until the tomatoes are soft, bursting, and caramelized, intensifying their natural sweetness and flavor.
  3. Make the whipped feta. Process for 2 to 3 minutes until the mixture is creamy, smooth, and whipped, with a luscious texture.
