Ingredients

Grapefruit Salad:

  • 3 large grapefruits

Fruit Salad:

  • 1 large mango, cut into bite-sized pieces
  • 2 kiwi fruit, peeled and cut into bite-sized pieces
  • 1 cup blueberries
  • 1 cup chopped strawberries
  • 1 cup chopped pineapple
  • 1 tbsp honey (or maple syrup) (omit for Whole30)
  • 1/3 cup orange juice
  • 1 tsp poppy seeds
  • 1/3 cup shredded fresh mint

Instructions

  1. Cut and Prepare Grapefruit: Cut the grapefruit in half through the middle, remove the pulp with a sharp knife, and scoop out the segments with a spoon. Reserve any excess grapefruit juice in a bowl.
  2. Prepare Fruit Salad: In a bowl, combine all the fruit for the salad, including the grapefruit segments.
  3. Make Dressing: In a small bowl, whisk together honey, orange juice, 2 tbsp grapefruit juice, and poppy seeds.
  4. Toss and Serve: Pour the dressing over the salad, add 1/4 cup of shredded mint, toss to coat the fruit well. Spoon the fruit salad into each grapefruit bowl, garnish with more shredded mint before serving.
