Ingredients

Vegetables and Seasonings

  • 2 TBSP olive oil
  • 1/2 large onion, diced
  • 3 ribs celery, sliced
  • 3 carrots, diced
  • 1 tsp garlic powder
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp dried basil
  • 1/4 tsp black pepper
  • Salt to taste

Liquids and Pasta

  • 4 cups broth (chicken or vegetable)
  • 28-ounce can crushed tomatoes
  • 1/3 cup dry orzo pasta

Instructions

  1. Prepare Vegetables: Heat olive oil in a stockpot over medium-high heat or in the Instant Pot using the Saute function. Add diced onions, sliced celery, and diced carrots. Cook for 3-5 minutes, stirring frequently, until onions are translucent and vegetables begin to soften.
  2. Add Liquids and Seasonings: For stove top, add broth, crushed tomatoes, garlic powder, Italian seasoning, dried basil, and black pepper to the pot and stir well to combine. For Instant Pot, after sauteing vegetables, press Cancel to stop Saute mode and then add the same ingredients along with dry orzo pasta, stirring thoroughly.
  3. Cook the Soup: On the stove top, bring the mixture to a boil, then stir in orzo pasta. Reduce heat to simmer and cook for 8-10 minutes, stirring occasionally, until the pasta is al dente. In the Instant Pot, close the lid and seal the vent. Set to cook on high pressure for 3 minutes. Allow a 10-minute natural pressure release followed by a quick release of any remaining pressure.
  4. Finish and Serve: Once cooking is complete, carefully remove the lid (Instant Pot) or turn off the stove. Stir soup well and adjust salt to taste. Serve hot and enjoy the flavorful vegetable orzo soup.

Notes

  • If you don’t have orzo pasta, substitute with small pastas such as small shells, ditalini, or macaroni, noting that larger shapes may require a slightly longer Instant Pot cooking time (around 4 minutes).
  • The soup reheats well but thickens as pasta absorbs liquid. When reheating, add water or broth to adjust consistency to your liking.
