Ingredients

Date Mixture:

  • 1 cup (packed) medjool dates, pitted and chopped
  • 1 cup non-dairy milk
  • 1/2 cup water
  • 1 tsp baking soda

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves

Wet Ingredients:

  • 1/2 cup vegan butter, melted
  • 1/2 cup cane sugar
  • 1/4 cup molasses
  • Vanilla ice cream for serving

Caramel Sauce:

  • 1/2 cup vegan butter
  • 1 cup brown sugar
  • 1/4 cup non-dairy milk
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a greased 8×8 baking dish with parchment paper.
  2. Prepare date mixture: In a saucepan, simmer dates, non-dairy milk, and water. Remove from heat, stir in baking soda, and let cool.
  3. Mix dry ingredients: In a bowl, whisk flour, baking powder, cinnamon, ginger, and cloves.
  4. Combine wet ingredients: Mix date mixture with melted butter, cane sugar, and molasses.
  5. Combine wet and dry: Pour wet ingredients over dry, mix, and pour into the cake pan.
  6. Bake: Bake for 35-40 minutes until a tester comes out clean. Cool before slicing.
  7. Make caramel sauce: Melt butter with sugar and milk, simmer, then stir in vanilla and salt. Cool until thickened.
  8. Serve: Drizzle cake with caramel sauce and serve with vanilla ice cream.

Notes
