Ingredients

Vegan Gyro Meat

  • 1 ½ tsp vinegar

  • 2-4 pita breads (depending on size)
  • 1 small head lettuce
  • 2-3 tomatoes
  • 1 cucumber
  • 1 batch tzatziki (vegan)
  • Fresh herbs

Gyro Seasoning

  • ½ tsp dried oregano
  • ½ tsp sweet paprika powder
  • ¼ tsp dried thyme
  • ¼ tsp coriander powder
  • ¼ tsp ground black pepper
  • ¼ tsp ground cumin
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp dried marjoram
  • ¼ tsp salt
  • ⅛ tsp chili flakes

Instructions

  1. Prepare Vegetables: Dice the onion and slice or tear the mushrooms into bite-sized pieces, depending on the mushroom type.
  2. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add diced onion and mushrooms, cooking for 3-5 minutes until softened.
  3. Add Garlic and Seasoning: Stir in the finely minced garlic and gyro seasoning. Fry together for an additional one minute to release the spices’ flavors.
  4. Add Liquids: Pour in the vegetable broth and tomato paste, stirring well to combine. Then mix in the soy sauce, maple syrup, and vinegar.
  5. Simmer: Let the mixture simmer for a few minutes, allowing the flavors to meld and the mixture to thicken slightly. Then turn off the heat.
  6. Assemble Gyros: Warm the pita breads. Top each pita with the vegan gyro mixture, then add salad veggies like lettuce, tomatoes, cucumber, tzatziki, and sprinkle with fresh herbs.
