Ingredients

For The Meatballs

  • pound ground turkey
  • 1 large egg, lightly beaten
  • ½ onion, finely chopped
  • ¼ cup almond flour
  • 4 garlic cloves, minced
  • 1 ½ teaspoons finely chopped fresh rosemary
  • 1 ½ teaspoons finely chopped fresh thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons extra-virgin olive oil

For The Sauce

  • 1 cup chicken broth
  • ¼ cup Dijon mustard
  • ¼ cup maple syrup
  • 2 tablespoons mayonnaise
  • extra fresh rosemary and thyme for garnish

Instructions

  1. Make turkey mixture. To a large bowl, add the turkey, egg, onion, almond flour, garlic, rosemary, thyme, salt, and pepper. Mix everything together until fully combined.
  2. Form meatballs. Measure out 1 1⁄2 tablespoons of mixture and roll into 30 meatballs. Place on a plate.
  3. Pan sear meatballs. Brown meatballs in oil, then set aside.
  4. Make the sauce. Deglaze pan, add broth, Dijon, maple syrup, and mayonnaise. Simmer until creamy.
  5. Serve. Add meatballs back to the pan, warm through, and garnish with herbs.

Notes

  • If you’re looking for a nut-free binder, you can use a gluten-free flour blend instead of almond flour.
  • To thicken the sauce, add a slurry of 1 teaspoon arrowroot powder mixed with 2 teaspoons of water.
  • You can bake the meatballs instead of pan-searing. Bake at 400°F (200°C) for 20-25 minutes.
  • Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months. Reheat before serving.
