  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1218 sheets square rice paper wrappers bánh tráng
  • 2 cups shredded romaine lettuce
  • 1 cup shredded red cabbage
  • 1 cup thinly julienned red bell pepper
  • 1 cup shredded carrot
  • 1 bunch fresh mint leaves
  • 1 bunch fresh Thai basil leaves
  • 1 bunch fresh cilantro

For the Sauce:

  • ¼ cup peanut butter
  • ¼ cup hoisin
  • 2 teaspoons sambal oelek
  • ¼ cup warm water
  • 2 tablespoons chopped peanuts (optional)

Instructions

  1. PREP SPRING ROLL FILLING: Bring a pot of water to a boil. Add vermicelli noodles and cook for 7-8 minutes. Drain and set aside. In a pan, fry tofu until golden, then season with salt and pepper.
  2. ASSEMBLE SPRING ROLLS: Wet a rice paper sheet, place lettuce, noodles, tofu, vegetables, and herbs. Roll the rice paper, folding in the sides. Repeat with remaining ingredients.
  3. MAKE HOISIN PEANUT SAUCE: Whisk together peanut butter, hoisin, and sambal oelek. Thin the sauce with warm water to desired consistency. Top with chopped peanuts and serve with spring rolls.

Notes

  • Ensure the rice paper is not oversoaked to prevent tearing.
