  • 3 teaspoons Softened Butter or vegan butter

Vegetables

  • 1/2 Red Onion, finely chopped
  • 1 Salad Tomato, diced
  • 1/2 Green Bell Pepper, diced
  • 1 Green Chilli, finely diced (adjust to taste)

  • 70g (2oz) Mozzarella Cheese or vegan alternative, grated
  • 70g (2oz) Cheddar Cheese or vegan alternative, grated

Instructions

  1. Preheat the oven: Set your oven to the grill (UK) or broiler (US) setting at 230°C (450°F) to prepare for toasting and melting the cheese.
  2. Prepare the ingredients: While the oven heats, finely chop the red onion, dice the tomato and green bell pepper, and finely dice the green chilli. Grate both mozzarella and cheddar cheese.
  3. Butter the bread: Generously spread softened butter on one side of each bread slice and place them butter-side up on a baking tray.
  4. Toast the bread: Grill or broil the bread slices until golden brown and crisp on the buttered side, about 3-5 minutes. Monitor closely to avoid burning.
  5. Flip and add toppings: Remove the tray and flip each slice so the golden buttered side faces down. Evenly spread the diced onion, bell pepper, tomato, and green chilli over the top.
