Ingredients

Vegetables:

  • 2 carrots, cut into bite-size pieces
  • 2 medium potatoes, cut into bite-size pieces
  • 1/2 yellow onion, diced

Protein:

  • 2 chicken breasts, cubed

Seasonings:

  • 2 Tbsp. olive oil
  • 2 tsp. ground ginger
  • 2 tsp. minced garlic
  • 1 – 4oz. jar red curry paste
  • 4 tsp. soy sauce
  • juice from 1 lime

Sauce:

  • 2 cans coconut milk
  • 1/4 cup + 2 Tbsp. Peanut butter
  • 5 Tbsp. brown sugar

Instructions

  1. Sauté Vegetables: In a large skillet or pot, heat oil over medium-high heat. Add onions, carrots, and potatoes; sauté for 4-5 minutes.
  2. Add Protein and Seasonings: Add chicken, ginger, garlic, and red curry paste; mix well. Sauté for a few more minutes.
  3. Simmer: Stir in coconut milk and simmer over medium-low heat for 10 minutes until vegetables are tender.
  4. Finish with Sauce: Stir in peanut butter, brown sugar, soy sauce, and lime juice. Cook for an additional 4-5 minutes.
  5. Serve: Serve over rice and garnish with chopped peanuts.
