Ingredients

For the Taco Skillet:

  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 1 red bell pepper, diced
  • 1 pound lean ground turkey
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 4 oz can diced green chiles
  • 15 oz can black beans, drained and rinsed
  • 1/2 cup frozen corn
  • 2 tablespoons chopped cilantro
  • 15 oz jar salsa
  • 1 cup shredded colby jack cheese
  • 10 tortilla chips

Instructions

  1. Preheat oven to broil.

    Heat a 12-inch skillet over medium-high heat. Add olive oil, ground turkey, crumble and cook.

  2. Add veggies and spices.

    Saute onions, bell pepper, and spices with the turkey until cooked through.

  3. Combine beans, corn, and salsa.

    Stir in black beans, corn, green chiles, cilantro, and salsa. Heat through.

  4. Top with chips and cheese.

    Place tortilla chips and cheese on top of the skillet mixture.

  5. Broil until cheese is melted.

    Broil the skillet until cheese is bubbly and slightly browned. Garnish with cilantro and serve.
