Ingredients

1 cup mashed sweet potato (about 2 medium, cooked and peeled)

½ cup almond butter (or peanut butter)

¼ cup coconut oil, melted

½ cup pure maple syrup (or honey)

1 teaspoon vanilla extract

½ cup cocoa powder

½ cup almond flour (or oat flour)

1 teaspoon baking powder

¼ teaspoon salt

½ cup dark chocolate chips

Melted dark chocolate, for drizzling

Instructions

  1. Preheat the Oven:
  2. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  3. Mix the Wet Ingredients:
  4. In a large mixing bowl, combine the mashed sweet potato, almond butter, melted coconut oil, maple syrup (or honey), and vanilla extract. Stir until smooth and well combined.
  5. Add the Dry Ingredients:
  6. Add cocoa powder, almond flour, baking powder, and salt. Stir gently until just combined. Be careful not to overmix.
  7. Fold in the Chocolate Chips:
  8. Gently fold the dark chocolate chips into the batter.
  9. Bake the Brownies:
  10. Spread the brownie batter evenly into the prepared baking pan. Bake for 28–32 minutes, or until the center is set but still fudgy. Check by inserting a toothpick—if it comes out with a few moist crumbs, they’re done.
  11. Cool and Slice:
  12. Let the brownies cool completely in the pan. For cleaner cuts and a fudgier texture, chill the brownies in the fridge before slicing.
  13. Drizzle with Chocolate:
  14. Once the brownies are cool, drizzle melted dark chocolate on top for an extra indulgent touch.
  15. Serve and Enjoy:
  16. Slice into 12 squares, serve, and enjoy your delicious, healthy brownies!

Notes

  • Vegan Version: Replace honey with maple syrup and use dairy-free chocolate chips for a fully vegan treat.
  • Nut-Free Version: Use sunflower seed butter instead of almond butter to make the recipe nut-free.
  • Chocolate Lover’s Version: Add extra chocolate chips to the batter or top with additional melted chocolate before serving.
