Ingredients

2.2 lb sweet potatoes

100 g unsalted butter

½ cup dark brown sugar

⅓ cup maple syrup

¼ cup orange juice

Zest from 1 small orange

½ teaspoon cinnamon

½ teaspoon nutmeg

1 teaspoon vanilla extract

Pinch of coarse sea salt

Instructions

  1. Prepare the Sweet Potatoes: Wash, peel, and cut the sweet potatoes into rounds or cubes (about 6-8 cm thick).

  2. Make the Sauce: In a skillet over medium heat, melt the butter, being careful not to let it burn. Add dark brown sugar, maple syrup, orange juice, orange zest, sea salt, cinnamon, and nutmeg. Stir until the sugar dissolves and the mixture combines.

  3. Cook the Sweet Potatoes: Add the sweet potatoes to the skillet, stirring to coat them in the syrup. Partially cover the skillet and simmer on low heat for 10-15 minutes, stirring halfway through. Cook until the sweet potatoes are fork-tender and the sauce thickens into a syrupy consistency.

  4. Finish and Serve: Remove from heat and transfer to a serving dish. Spoon the caramelized syrup over the sweet potatoes and sprinkle with additional sea salt for added flavor. Let cool slightly before serving.

Notes

  • Add Nuts: For extra texture, sprinkle chopped toasted pecans or walnuts on top before serving.
  • More Spices: Feel free to add ginger, allspice, or cloves for an extra holiday twist.
  • Can Cook More: This recipe can easily be scaled to serve up to 3 pounds of sweet potatoes.
