Ingredients

  • ½ cup (65 g) green olives, halved (optional)
  • Fresh herbs, such as cilantro or parsley, to garnish

Instructions

  1. Soak Rice: Place rice in a bowl with cold or lukewarm water for at least 10 minutes, then discard water.
  2. Sauté Vegetables: Heat oil in a skillet, sauté onion and bell pepper. Add garlic and spices.
  3. Cook Rice: Add rice, salsa, and broth. Simmer covered for 15-20 minutes without stirring.
  4. Adjust Seasonings: Taste and adjust salt, pepper, and spices. Stir in beans and olives, garnish with herbs.
