Ingredients

Smashed Chickpeas

  • 1 15-oz can chickpeas, drained and patted dry with paper towels
  • ¼ medium white onion
  • 1 Tbsp flour
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp smoked paprika
  • 2 Tbsp olive oil

Caesar Wraps

  • 2 tortilla wraps
  • 2 handfuls chopped romaine
  • 2 to 4 Tbsp Caesar dressing
  • 2 Tbsp parmesan cheese

Instructions

  1. Blend: Add chickpeas, onion, flour, garlic powder, salt, and smoked paprika to a food processor. Blitz until it forms a thick dough.
  2. Scoop: Scoop mixture onto tortilla wraps.
  3. Spread: Spread mixture evenly over wraps.
  4. Cook: Heat olive oil in a pan, then cook wraps chickpea-side down until golden brown.
  5. Assemble: Add romaine, Caesar dressing, and parmesan cheese on wraps.
  6. Serve: Roll up wraps, slice in half, and enjoy!

Notes

  • Can be made in advance, but best to keep dressing separate until ready to eat to prevent wilting.
