Ingredients

Meat & Beans

  • 1 pound ground beef
  • 15 ounce canned black beans, drained and rinsed

Seasonings & Sauces

  • 1 ounce packet taco seasoning
  • 14.5 ounce beef broth
  • 10 ounce enchilada sauce

Pasta & Cheese

  • 19 ounce cheese tortellini (frozen or refrigerated)
  • 2 cups shredded cheese (such as Colby Jack or cheddar)

Optional Garnishes

  • Additional shredded cheese
  • Sliced green onions
  • Sour cream
  • Salsa

Instructions

  1. Brown the Ground Beef: Add ground beef to a large skillet over medium-high heat. Cook, breaking apart the meat as it browns, until fully cooked through.
  2. Combine Ingredients: Drain excess grease from the beef, then stir in black beans, taco seasoning, beef broth, and enchilada sauce to the skillet mixture until well combined.
  3. Cook Tortellini: Bring the mixture to a gentle boil. Add the frozen tortellini and stir gently to coat with sauce. Cover the skillet with a lid and simmer for 3-5 minutes until the tortellini is cooked through.
  4. Add Cheese and Rest: Remove the skillet from heat, uncover, and stir in shredded cheese until melted into the sauce. Let the dish rest for a few minutes to allow the sauce to thicken.
  5. Serve and Garnish: Garnish with optional additional cheese, sliced green onions, sour cream, or your favorite toppings, then serve warm.

Notes

  • Use frozen or refrigerated tortellini; dried tortellini has not been tested in this recipe.
  • Black beans can be substituted with kidney beans if preferred.
  • Colby Jack or cheddar cheese works best; pepper jack can be used for extra heat.
  • Shredding your own cheese is recommended for better melting.
  • Adjust spicy levels by choosing mild, medium, or hot enchilada sauce and taco seasoning.
  • Add diced onions and peppers while browning beef or add corn when simmering to increase veggie content.
  • Top with fresh tomatoes or your favorite garnishes like salsa or sour cream for extra flavor.
