Ingredients

For the Shrimp:

  • 1 pound large shrimp, peeled and deveined, tails removed
  • 2 tablespoons olive oil, divided
  • 3 tablespoons fajita seasoning
  • 2 tablespoons lime juice, divided

For the Fajitas:

  • 2 bell peppers, thinly sliced
  • 1 red onion, thinly sliced

For Serving (Optional):

  • 8 tortillas, corn or flour

Instructions

  1. Marinate the Shrimp: In a large bowl, combine shrimp with 1 tablespoon olive oil, 1 tablespoon lime juice, and fajita seasoning. Set aside.
  2. Cook Veggies: Heat 1 tablespoon olive oil in a skillet, sauté bell peppers and onions for 10-12 minutes.
