Ingredients

For the Fajitas:

  • 1 1/2 tablespoons avocado or olive oil
  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 white onion, sliced thin
  • 1 tablespoon chopped cilantro
  • 1 lime
  • Tortillas and toppings of your choice for serving

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F. Drizzle oil on a sheet pan or line it with foil or parchment paper.
  2. Prepare the Ingredients: Cut the chicken, bell peppers, and onion into thin strips of similar thickness for even cooking.
  3. Season the Chicken and Veggies: In a small bowl, combine the fajita seasoning ingredients. Add the seasoning to the chicken, bell peppers, and onions, then drizzle with oil. Toss until coated.
  4. Bake: Spread the chicken and veggies in a single layer on the sheet pan. Bake for 15-20 minutes or until the chicken is cooked through.
  5. Finish and Serve: Squeeze fresh lime juice over the fajitas. Serve with warm tortillas and your favorite toppings.
