Ingredients

For the Raspberry Syrup:

1 ½ cups fresh raspberries

½ cup sugar

½ cup water

1 tbsp lemon juice

For the Mascarpone Cream:

8 oz mascarpone cheese

1 cup heavy cream

¼ cup powdered sugar

1 tsp vanilla extract

For the Layers:

24 ladyfingers

1 cup fresh raspberries

¼ cup white chocolate shavings (optional)

2 tbsp fresh mint (optional)

Instructions

  1. Make Raspberry Syrup:
In a saucepan, combine the raspberries, sugar, water, and lemon juice. Simmer for 5-7 minutes until the raspberries break down and the syrup thickens slightly.
Strain the syrup to remove the raspberry seeds, then set it aside to cool.
  2. Prepare Mascarpone Cream:
In a large mixing bowl, whip the heavy cream to stiff peaks using an electric mixer.
In a separate bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
Gently fold the whipped cream into the mascarpone mixture, ensuring it’s well combined and creamy.
  3. Assemble:
Dip the ladyfingers one at a time into the raspberry syrup, making sure they are soaked but not soggy.
Arrange a layer of dipped ladyfingers in the bottom of a dish.
Spread half of the mascarpone cream mixture over the ladyfingers, then sprinkle with fresh raspberries.
Repeat the process with another layer of dipped ladyfingers, mascarpone cream, and raspberries.
  4. Chill:
Cover and refrigerate the assembled tiramisu for at least 4 hours to allow the flavors to meld together and the dessert to set.
  5. Serve:
Before serving, garnish the tiramisu with extra fresh raspberries, white chocolate shavings, and mint leaves for a beautiful and festive touch.

Notes

  • You can prepare the raspberry syrup ahead of time and store it in the fridge for a few days.
  • For a more intense raspberry flavor, you can add a bit more raspberry syrup to the layers.
  • This dessert can be made a day ahead for even better flavor as it has time to set.
