Ingredients

Pumpkin Cookies

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1½ teaspoons cinnamon
  • ½ teaspoon pumpkin pie spice or extra cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup unsalted butter, room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar, light or dark, packed
  • 1 large egg, room temperature
  • 1½ teaspoons vanilla extract
  • 1 cup pure pumpkin puree, canned

Pumpkin Spice Sugar Coating (optional)

  • 3 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • ½ teaspoon pumpkin pie spice or ground cinnamon

Brown Sugar Cream Cheese Frosting

  • 4½ ounces full-fat cream cheese, brick style, room temperature
  • 3 tablespoons unsalted butter, room temperature
  • 2 tablespoons brown sugar, light or dark, packed
  • 2 cups powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Pumpkin Cookies – Preheat oven to 350°F. Line baking sheets with parchment paper. Whisk dry ingredients. Cream butter and sugars, add egg, vanilla, and pumpkin. Stir in dry ingredients. Bake and cool cookies.
  2. Pumpkin Spice Sugar Coating (optional) – Melt butter. Combine pumpkin spice and sugar. Brush cookies with butter and coat with sugar.
  3. Brown Sugar Cream Cheese Frosting – Mix cream cheese and butter. Add sugar, vanilla, and powdered sugar. Frost whoopie pies.
