Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp pumpkin pie spice
  • 2 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients:

  • 1 1/2 cups pumpkin puree
  • 1/3 cup olive oil
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 2 eggs, room temperature
  • 2/3 cup brown sugar
  • 1/2 cup granulated sugar

For the Coating:

  • 3/4 cup granulated sugar
  • 2 tsp cinnamon
  • 1/4 cup melted butter

Instructions

  1. Preheat and Prepare: Preheat the oven to 350F and grease a large donut pan with cooking spray.
  2. Mix Wet Ingredients: In a medium bowl, whisk together pumpkin puree, olive oil, melted butter, vanilla, eggs, brown sugar, and granulated sugar until smooth.
  3. Add Dry Ingredients: Stir in flour, pumpkin pie spice, baking powder, and salt until just combined.
  4. Fill Donut Pan: Transfer batter to a piping bag or plastic bag, and pipe into the prepared donut pan.
