Ingredients

Crust

  • 1 1/2 cups Graham Cracker Crumbs
  • 1/4 cup Butter, Melted

Cheesecake

  • 4 (8 oz) packages Cream Cheese, Softened
  • 1 1/2 cups Sugar
  • 4 Eggs
  • 1 cup Canned Pumpkin
  • 2 tsp Pumpkin Pie Spice

Whipped Cream (Optional)

Instructions

  1. Preheat and Prepare: Heat oven to 300 degrees. Spray a 9 x 13 pan with non-stick spray.
  2. Make Crust: Combine graham cracker crumbs and melted butter. Press mixture into the prepared pan.
  3. Prepare Cheesecake: Beat softened cream cheese and sugar. Add eggs one at a time. Spoon half of the mixture over the crust.
  4. Add Pumpkin: Mix canned pumpkin and pumpkin pie spice into the remaining mixture. Spoon over the layer in the pan.
  5. Bake: Bake for 50 minutes or until just set. Allow to cool in the oven with the door ajar for an hour.
  6. Chill: Refrigerate until firm before cutting into bars.
  7. Serve: Top with whipped cream if desired.
