Ingredients

1.1 pounds (500 g) Polish kiełbasa

4 medium potatoes

2 medium red onions

1 red bell pepper

1 medium zucchini/courgette

2 teaspoons herbes de Provence

2½ tablespoons olive oil

⅓ teaspoon fine sea salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat to 425°F (220°C).

  2. Prepare the Kiełbasa: Cut the sausage into 3-inch pieces, score with a crisscross pattern.

  3. Prepare the Vegetables: Peel and cut potatoes into wedges, cut onions into wedges, slice bell pepper and zucchini.

  4. Season the Vegetables: In a bowl, mix vegetables with herbes de Provence, salt, pepper, and olive oil.

  5. Assemble the Bake: Spread vegetables on a roasting pan, tuck kielbasa pieces among them.

  6. Bake: Bake for 45 minutes until potatoes are fully cooked, check for doneness and serve!
