  • 1 can (14 oz) Coconut Milk
  • 2 teaspoons Fresh Ginger, minced
  • 2 Garlic Cloves, minced
  • 1 Tablespoon Rice Vinegar
  • 2 Tablespoons Honey or Maple Syrup

Instructions

  1. Preheat Oven: Preheat the oven to 375°F and grease a medium baking dish or skillet.
  2. Make Sauce: In a bowl, whisk together coconut milk, red curry paste, soy sauce, sesame oil, rice vinegar, ginger, and garlic. Adjust seasoning to taste.
  3. Prepare Dumplings: Arrange frozen dumplings in a single layer in the dish. Pour the sauce over them.
  4. Bake: Cover with foil and bake for 20 minutes. Uncover and bake for an additional 5-10 minutes until bubbly and dumplings are cooked.
  5. Finish: If using spinach, add it to wilt slightly. Garnish with cilantro, green onions, sesame seeds, and chili crisp.

Notes

  • I used frozen dumplings from Trader Joe’s, but any brand will work.
  • If using dried ginger, reduce the amount to 1 teaspoon.
  • Use fresh minced garlic or frozen garlic cubes for convenience.
