Ingredients

Dark Chocolate Mixture:

  • 180 g (6 oz) 70% dark chocolate, chopped
  • 125 ml (½ cup) extra-virgin olive oil, plus more for greasing
  • ½ tsp espresso powder

Brownie Batter:

  • 3 large eggs, room temperature
  • 150 g (¾ cup) granulated sugar
  • 100 g (½ cup) light brown sugar, packed
  • ½ tsp fine sea salt
  • 1 tsp pure vanilla extract
  • 90 g (¾ cup) all-purpose flour, spooned and leveled
  • 12 g (2 tbsp) Dutch-processed cocoa powder

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (180°C) and grease a 10-inch (25.4 cm) cast iron skillet with olive oil.
  2. Melt chocolate: Melt the dark chocolate in a heatproof bowl. Add olive oil and espresso powder, whisk, and set aside.
  3. Prepare batter: Beat eggs and sugars until pale. Mix in salt and vanilla. Add chocolate mixture and fold in flour and cocoa powder.
  4. Bake: Transfer batter to skillet and bake for 25-30 minutes until top is shiny and edges are cracked.
  5. Cool and serve: Cool for 20 minutes before slicing and serving.
