Ingredients

For the Crust and Topping

  • 1 cup rolled oats
  • 1/2 cup oat flour*
  • 1/2 cup chopped almonds
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup almond butter

For the Fig Filling

  • 2 1/2 cups dried figs, stems removed
  • 3 tablespoons liquid sweetener (e.g., honey or maple syrup)
  • 2 tablespoons fig soaking water

Instructions

  1. Preheat the oven to 350 degrees. Line an 8×8-inch baking dish with parchment paper, leaving overhang on the sides.
  2. Soak the dried figs in hot water for 10 minutes.
  3. Mix rolled oats, oat flour, almonds, ginger, cinnamon, salt, and almond butter in a bowl.
  4. Press 3/4 of the mixture into the baking dish for the crust.
  5. Process soaked figs with honey and soaking water in a food processor until smooth.
  6. Spread the fig mixture over the crust.
  7. Top with remaining oat mixture crumbles.
  8. Bake for 20 minutes, then cool and cut into squares before serving.

Notes

  • Rolled oats can be blended to make oat flour.
  • AP or whole wheat flour can substitute oat flour.
