Ingredients

2.2 lb (1 kg) new baby potatoes

1 tablespoon olive oil

3 tablespoons unsalted butter (melted)

1 ½ teaspoons garlic paste

⅓ cup Parmesan cheese (grated)

⅓ cup Gruyère cheese (grated)

⅓ teaspoon cayenne pepper

Salt and freshly ground black pepper to taste

Fresh parsley for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes: Wash and pat the potatoes dry. Slice the potatoes width-wise every 2-3mm (1/8 inch) without cutting all the way through. You can use chopsticks to help prevent cutting all the way through.
  3. Prepare the Butter Mixture: In a small bowl, combine melted butter, olive oil, garlic paste, cayenne pepper, salt, and black pepper. Mix well.
  4. Coat the Potatoes: Place the potatoes in a baking dish and generously brush with the butter-oil mixture, making sure to get into each slice.
  5. Bake the Potatoes: Bake the potatoes for 20-25 minutes, basting with the butter mixture every 10 minutes.
  6. Finish Baking: Remove the potatoes and sprinkle with grated Parmesan and Gruyère cheese. Return to the oven for another 5-10 minutes until the cheese is melted and the potatoes are golden and crispy.
  7. Garnish and Serve: Once done, remove from the oven and sprinkle chopped parsley over the potatoes. Serve immediately.
