These Mini Apple Pies feature buttery, flaky crusts and warm, cinnamon-spiced apple filling in perfectly portioned sizes. Ready in just 30 minutes, they’re ideal for parties, brunches, or a sweet snack. Customize with lattice tops, caramel, or extra spices for a personal touch, and serve warm or at room temperature with ice cream for an irresistible treat.
2 pie crusts, store-bought or homemade
3 medium apples, peeled, cored, and diced (approx. 4 cups)
1 tablespoon granulated sugar
1 tablespoon brown sugar
½ teaspoon cinnamon
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 tablespoon butter, cut into small pieces
1 egg, for egg wash
Coarse white sugar (optional, for topping)
Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
Roll out pie crusts and cut 12 circles using a 4-inch round cutter. Press each into a muffin cup.
In a medium bowl, mix apples, granulated sugar, brown sugar, cinnamon, flour, vanilla, and lemon juice.
Fill each pie crust with apple mixture and top with a small piece of butter.
Cut extra pie crust rounds or strips for lattice tops, or cover with a full round and seal edges with a fork.
Beat egg and brush over pies. Sprinkle with coarse sugar if desired.
Bake 18–20 minutes until golden brown. Cool 10 minutes before removing. Serve warm or at room temperature, optionally with vanilla ice cream.
