Ingredients

Dry Ingredients:

  • 2 cups flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • zest of one lemon

Wet Ingredients:

  • 1 egg
  • 1 cup milk
  • 1/2 cup softened butter
  • 1 cup fresh or frozen blueberries

Topping:

  • 1/4 cup butter, melted
  • 1/2 Tablespoon lemon juice
  • 1/2 cup sugar

Instructions

  1. Preheat oven: Preheat oven to 375 degrees F and line muffin tin with foil liners or spray with cooking spray.
  2. Mix dry ingredients: Combine flour, sugar, baking powder, salt, and lemon zest; set aside.
