Ingredients

Feta Cheese Dip:

  • 325 grams feta cheese
  • 230 grams Greek Anthotyro or Ricotta cheese
  • 1 teaspoon fresh lemon juice
  • 4 tablespoons extra virgin olive oil

Red Pepper Blend:

  • 1 large roasted red pepper
  • 1 teaspoon chopped chili peppers

Instructions

  1. Feta Cheese Dip: Cut the feta cheese into small cubes and add to a food processor. Add Anthotyro or Ricotta cheese, 2 tablespoons of olive oil, and lemon juice. Blend until smooth and creamy.
  2. Red Pepper Blend: In the same food processor, blend roasted red pepper, chili peppers, and remaining olive oil until almost smooth. Combine with the cheese mixture in a bowl. Stir well to combine.
  3. Serve immediately or refrigerate for up to a week. Enjoy with bread or pita bread.
