Ingredients

Spicy Chicken Salad

  • 1 batch Spicy Chicken Salad (prepared separately)

For the Sandwich

  • 2 slices of your favorite bread (preferably thick sliced)
  • 2 slices sharp cheddar cheese (or your favorite cheese)

Instructions

  1. Prepare the Spicy Chicken Salad: Make the spicy chicken salad according to your preferred recipe or use a store-bought version.
  2. Toast the Bread: Toast the two slices of bread until golden brown or to your liking using a toaster or oven.
  3. Assemble the Sandwiches: Evenly spread the prepared spicy chicken salad over each toasted bread slice.
  4. Add Cheese: Place one or two slices of sharp cheddar cheese on top of the chicken salad on each slice.
  5. Melt the Cheese: Place the assembled open-face sandwiches under the oven broiler for about 2 minutes, watching closely until the cheese is melted and slightly bubbly.
  6. Serve: Remove from the oven and enjoy immediately as open-faced sandwiches.

Notes

  • Substitute 2 (5-ounce) cans of drained tuna or one can of rinsed, drained, and mashed chickpeas for the chicken salad.
  • Serve the chicken salad cold in a wrap or scoop it with pita chips for a different serving style.
