Ingredients

Base:

  • 3 cups unsweetened finely shredded coconut
  • 1/4 cup maple syrup or honey
  • 3 tbsp melted coconut oil
  • 1 tsp vanilla extract (Optional but recommended)
  • Pinch of sea salt (Optional but recommended)

Chocolate Topping:

  • 1 cup Chocolate bars, chopped (or chocolate chips)
  • 2 tsp coconut oil
  • Raw almonds

Instructions

  1. Make the coconut base: Combine all base ingredients in a food processor and process until sticky. Do not over-process.
  2. Press into pan: Divide mixture into mini muffin pan, press down firmly.
  3. Prepare chocolate topping: Melt chocolate and coconut oil, then top each bite with chocolate and an almond.
  4. Freeze: Freeze for 3-4 hours, then store in an airtight container in the freezer.
