Ingredients

1 lb ground turkey

2 medium potatoes, diced

1 onion, chopped

1 bell pepper, chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and black pepper, to taste

Red chili flakes (optional)

Fresh parsley, for garnish

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add diced potatoes and cook 8–10 minutes until golden and tender. Remove and set aside.

  2. Add remaining oil to the skillet. Sauté onion and bell pepper 3–4 minutes until softened.

  3. Stir in garlic and cook 1 minute.

  4. Add ground turkey, breaking apart as it cooks, 6–8 minutes until browned. Season with smoked paprika, thyme, salt, pepper, and optional chili flakes.

  5. Return potatoes to skillet, toss gently, and cook 2–3 minutes for flavors to meld. Garnish with parsley and serve hot.
