Ingredients

For the Grilled Chicken:

  • 23 boneless skinless chicken breasts
  • Avocado oil, salt, and pepper to taste

  • 16 ounces (454 g) dry farfalle pasta, cooked
  • 1 pint cherry tomatoes, halved
  • 1 cup (133 g) diced or thinly sliced cucumber
  • ½ of a red onion, diced
  • ¼ cup (31 g) thinly sliced pepperoncini
  • ⅓ cup (45 g) kalamata olives, halved
  • ¾ cup (113 g) crumbled feta cheese

For the Dressing:

  • ½ cup (118 ml) olive oil
  • Juice from 1 lemon
  • 1 teaspoon dijon mustard
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Prepare the Grilled Chicken: Brush chicken with avocado oil, salt, and pepper. Grill for 10 minutes per side until internal temperature reaches 165 °F (74 °C). Let cool and chop into large pieces.
  2. Cook the Pasta: Cook farfalle pasta according to package instructions. Drain and cool.
  3. Make the Dressing: Whisk together olive oil, lemon juice, dijon mustard, oregano, salt, and pepper until well combined.
  4. Assemble the Salad: In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, pepperoncini, olives, and feta cheese. Toss with dressing until evenly coated.
