Ingredients

Gingerbread Cake

  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, room temperature
  • 1 egg, beaten
  • 1 cup molasses
  • ½ teaspoon salt
  • 1 ½ teaspoons cinnamon
  • 2 ½ cups flour
  • 1 ¼ teaspoon baking soda
  • 1 ½ teaspoons ginger
  • ¼ teaspoon ground cloves
  • 1 cup very hot water

Spiced Cake

  • ¾ cup unsalted butter, room temperature
  • 1 cup brown sugar, light or dark, packed
  • 1 cup granulated sugar
  • 3 eggs, beaten
  • 1 ¼ cup whole milk, room temperature
  • 3 cups flour
  • ¾ teaspoon salt
  • ¾ teaspoons baking soda
  • 1 ½ teaspoon baking powder
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon allspice, optional*
  • ¼ teaspoon ground cloves, optional*

Maple Icing

  • 11 ½ cups powdered sugar (add more to achieve desired thickness)
  • 3 teaspoons maple syrup
  • ½ teaspoon vanilla extract
  • 1 tablespoon + 3 teaspoons milk (add milk gradually til desired thickness achieved)

Instructions

  1. Gingerbread Cake – Preheat oven to 350 degrees F. Grease and line loaf pans. Whisk dry ingredients. Cream sugar and butter, add egg and molasses. Mix in dry ingredients and hot water. Bake, cool, and cut into gingerbread men.
  2. Spiced Cake – Preheat oven. Butter and flour bundt pan. Sift dry ingredients. Cream butter and sugars, add eggs and milk. Alternate adding dry ingredients. Layer batter and gingerbread men in pan. Bake, cool, and ice.
  3. Maple Icing – Sift powdered sugar, add milk, maple syrup, and vanilla. Drizzle over cooled cake.

Notes

  • *For a stronger spice flavor, use 1/2 teaspoon allspice and 1/2 teaspoon ground cloves.
