For the Stew:
1 Tablespoon olive oil
2 Tablespoon butter
3/4 lb top sirloin cubes
Salt and pepper to taste
2 cups apple cider
1/2 cup beef broth
1 large onion, chopped
2 medium carrots, peeled and chopped
For the Mashed Potatoes:
6 large potatoes
1/4 cup milk
1/4 cup sour cream
1 cup sharp cheddar cheese, shredded
3 Tablespoons chives
Instructions
Preheat oven to 375 F. In a pan over medium-high heat, melt butter with olive oil. Season beef cubes with salt and pepper, then brown on all sides in the pan (6-8 minutes).
Add chopped onion and carrots. Cook for 4-5 minutes with the beef. Sprinkle with flour, stir to coat, and cook for another 1-2 minutes.
Pour in apple cider and broth. Bring to a boil. Transfer the mixture to an oven-safe pan, cover, and cook in the oven for 1 – 1 ½ hours.
Meanwhile, prepare the mashed potatoes. Boil potatoes until tender, then drain and return to the pan. Mash with milk, sour cream, cheese, and chives.
Serve the beef stew over the creamy mashed potatoes.
