  • 1 3/4 cups all-purpose flour (more if needed)

Instructions

  1. In a mixing bowl, beat the sugar, butter, lemon zest, salt, egg, and egg yolk until combined, about 3-4 minutes. This will create a creamy mixture.
  2. Add the flour gradually to form a soft dough. Mix until well incorporated.
  3. Form the dough into a ball or log and wrap it in plastic wrap. Chill in the refrigerator for 60 minutes.
  4. Preheat the oven to 350°F (180°C).
  5. Roll the chilled dough into golf ball-sized balls, or slice the log into 1/4-inch slices, or roll out the dough and cut out shapes with cookie cutters.
  6. Place the shaped cookies on parchment paper-lined baking sheets, spacing them about 2 inches apart.
  7. Chill the cookies for 10-15 minutes while the oven preheats.
  8. Bake the cookies for approximately 15-20 minutes until they turn golden brown. If slicing or using cookie cutters, check for doneness after 10 minutes.
  9. Allow the cookies to cool on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely.
