Instructions

  1. In a mixing bowl, beat the sugar, butter, lemon zest, salt, egg, and egg yolk until combined, about 3-4 minutes. This will create a creamy mixture.
  2. Add the flour gradually to form a soft dough. Mix until well incorporated.
  3. Form the dough into a ball or log and wrap it in plastic wrap. Chill in the refrigerator for 60 minutes.
  4. Preheat the oven to 350°F (180°C).
  5. Roll the chilled dough into golf ball-sized balls, or slice the log into 1/4-inch slices, or roll out the dough and cut out shapes with cookie cutters.
