4 slices sourdough or artisan bread
1 cup fresh blackberries
1 tablespoon balsamic vinegar
1 tablespoon honey
4 oz brie cheese, thinly sliced
2 tablespoons butter, softened
Pinch of salt
In a small saucepan over medium heat, combine the blackberries, balsamic vinegar, honey, and a pinch of salt.
Mash the berries and stir continuously until they break down and the mixture thickens—this takes about 5 minutes. Remove from heat and let it cool slightly.
Heat a non-stick or cast-iron skillet over medium-low heat.
Butter one side of each bread slice generously.
Place two slices, buttered-side down, onto the skillet. Top with sliced brie, a spoonful of the blackberry compote, and another layer of brie if desired.
Close the sandwiches with the remaining slices, buttered-side up.
Cook for 2–3 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is fully melted.
Remove from the pan, let rest for a minute, then slice diagonally and serve warm.
