Ingredients

4 slices sourdough or artisan bread

1 cup fresh blackberries

1 tablespoon balsamic vinegar

1 tablespoon honey

4 oz brie cheese, thinly sliced

2 tablespoons butter, softened

Pinch of salt

Instructions

  1. In a small saucepan over medium heat, combine the blackberries, balsamic vinegar, honey, and a pinch of salt.

  2. Mash the berries and stir continuously until they break down and the mixture thickens—this takes about 5 minutes. Remove from heat and let it cool slightly.

  3. Heat a non-stick or cast-iron skillet over medium-low heat.

  4. Butter one side of each bread slice generously.

  5. Place two slices, buttered-side down, onto the skillet. Top with sliced brie, a spoonful of the blackberry compote, and another layer of brie if desired.

  6. Close the sandwiches with the remaining slices, buttered-side up.

  7. Cook for 2–3 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is fully melted.

  8. Remove from the pan, let rest for a minute, then slice diagonally and serve warm.

Notes

  • Add chopped walnuts or pecans for extra crunch.
  • Swap brie with goat cheese or sharp cheddar for a different flavor profile.
  • Use frozen blackberries if fresh aren’t available—just simmer a bit longer to reduce.
  • For a sweeter bite, drizzle honey on top after grilling.
  • Gluten-free or dairy-free substitutions work great with the right alternatives.
