Ingredients

Potato Salad:

  • 2 ½ pounds (1134 g) red potatoes, skin-on, 3/4 inch dice

Dressing:

  • 1 cup (200 g) plain Greek yogurt
  • 2 green onions, thinly sliced
  • 3 ½ tablespoons Dijon whole grain mustard
  • 1 tablespoon Dijon mustard
  • Splash of dill pickle juice
  • Salt and pepper to taste
  • Handful of dill, chopped

Instructions

  1. Cook Potatoes: Add potatoes to a stockpot with enough cold water to cover. Simmer on medium heat for about 20 minutes until fork-tender. Drain.
  2. Cool Potatoes: Spread cooked potatoes in a single layer on a baking sheet and cool for 10 minutes.
  3. Prepare Dressing: In a large bowl, mix Greek yogurt, green onions, both mustards, dill pickle juice, salt, pepper, and chopped dill.
  4. Combine: Add cooled potatoes to the dressing and toss until evenly coated. Chill in the fridge until ready to serve.
