Ingredients

Mushroom Sauce:

  • 10 oz Cremini Mushrooms, sliced
  • 4 Tbsp Butter
  • 2 Shallots, minced
  • 5 Garlic Cloves, minced
  • 4 Sprigs Fresh Thyme (or 1/4 tsp Dried Thyme)
  • 2 Cups Beef Broth (or chicken or vegetable broth)
  • 2/3 Cup Heavy Cream (or Half and Half/Whole Milk)
  • Salt and Pepper, to taste
  • Truffle Oil or Salt, optional

Additional:

  • 12 Balls Burrata
  • 16 oz Pappardelle Pasta

Instructions

  1. Brown the butter: In a large skillet over medium heat, brown the butter. Add mushrooms and cook until the liquid evaporates.
  2. Sauté aromatics: Add shallots, garlic, and thyme; cook until fragrant. Pour in beef broth and let it reduce by half.
  3. Add cream: Stir in heavy cream and let it reduce by half. Season with salt and pepper.
  4. Cook pasta: Cook pappardelle according to package instructions. Reserve 1 cup of pasta water.
  5. Combine: Remove mushrooms, strain pasta, and add it to the sauce. Mix well, adding pasta water as needed.
  6. Serve: Transfer pasta to a dish, top with burrata, mushrooms, truffle oil, and extra thyme. Enjoy!
