Ingredients

4 medium-sized potatoes

1 cup shredded cheese (cheddar or mozzarella)

½ cup all-purpose flour

1 large egg

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon paprika (optional)

Oil for frying

Fresh herbs for garnish (optional)

Instructions

  1. Prep Potatoes: Peel, wash, and grate the potatoes using a box grater or food processor.
  2. Remove Moisture: Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  3. Mix Ingredients: In a large bowl, combine grated potatoes, shredded cheese, flour, egg, salt, pepper, and paprika. Mix well.
  4. Shape Sticks: Take a handful of the mixture and shape into sticks. Repeat with remaining mixture.
  5. Heat Oil: Heat oil in a deep skillet over medium-high heat, ensuring enough oil to partially submerge the sticks.
  6. Fry Sticks: Fry in batches for 3–4 minutes or until golden brown and crispy, turning halfway.
  7. Drain & Serve: Remove with a slotted spoon, place on paper towels to drain excess oil, garnish with fresh herbs, and serve immediately.

Notes

  • Variations: Swap cheddar or mozzarella for gouda, gruyere, or pepper jack. Add garlic powder, onion powder, or smoked paprika for extra flavor. Coat with panko breadcrumbs for extra crunch. Serve with dipping sauces like marinara, ranch, or garlic aioli.
  • Storage: Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in an air fryer or oven at 350°F (175°C) for 5–7 minutes to restore crispiness. Avoid microwaving.
  • Make Ahead: Prepare the mixture in advance and refrigerate before frying.
