Ingredients

1 pound ground turkey

1 medium onion, diced

2 cloves garlic, minced

8 ounces mushrooms, sliced

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup chicken broth

1 cup sour cream

2 tablespoons all-purpose flour

2 tablespoons olive oil

8 ounces egg noodles

Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil over medium heat in a large skillet. Add diced onion and sauté for 3 minutes until translucent. Add minced garlic and cook for an additional minute.
  2. Add ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  3. Stir in sliced mushrooms, paprika, salt, and black pepper. Cook for another 5 minutes until mushrooms are tender.
  4. In a small bowl, whisk together flour and chicken broth until smooth. Pour into the skillet, stirring well. Bring to a simmer for 3-4 minutes until slightly thickened.
  5. Reduce heat to low and stir in sour cream until fully combined. Cook for another 2 minutes, ensuring the mixture does not boil.
  6. Meanwhile, cook egg noodles according to package instructions. Drain and set aside.
  7. Serve the creamy turkey stroganoff over egg noodles and garnish with chopped fresh parsley.

Notes

  • Lighter Version: Substitute Greek yogurt for sour cream for a tangy and lighter option.
  • Add More Veggies: Stir in frozen peas, spinach, or zucchini for added color and nutrition.
  • Pasta Alternatives: You can swap egg noodles for fettuccine, penne, or zucchini noodles for a low-carb option.
  • Spicy Option: Add cayenne pepper, hot sauce, or sliced jalapenos for a spicier version of the dish.
