Creamy and flavorful, this hummus-inspired edamame dip is a delightful twist on the classic recipe. Perfect for snacking or as a spread, it’s easy to make and bursting with fresh flavors.
¼ cup fresh parsley or cilantro leaves, optional, plus extra for garnish
Instructions
Add all the ingredients to a food processor fitted with the metal ‘S’ blade. Blend until smooth and creamy, stopping to scrape down the sides as needed.
If your hummus is too grainy or thick, add a little extra water 1 Tablespoon at a time until your desired texture is achieved.
Taste the hummus and add more salt and/or lemon juice as needed.
Transfer the hummus to a shallow serving bowl. Drizzle the top with a little olive oil and sprinkle with some extra chopped fresh herbs to garnish if you’d like.
The hummus can be stored in an airtight container in the refrigerator for up to a week. The edamame hummus is great as a dip with raw veggies, crackers, fresh pita, and more. You can also use it as a spread on sandwiches or wraps.
Notes
If you don’t want to use tahini, the hummus will still be tasty without it. You could also replace the tahini with ½ an avocado or ¼ cup plain Greek yogurt to add some creaminess—but the avocado may cause the dip to brown a bit as it sits.
Feel free to add some spice with cayenne pepper or your favorite hot sauce.
