Ingredients

Main Curry Sauce:

  • 1 tablespoon olive oil
  • 2 tablespoons finely chopped shallots
  • 1 bay leaf
  • 1 tablespoon mild curry powder
  • 1 teaspoon triple-concentrated tomato paste
  • 1/2 cup chicken broth

Curry Sauce Base:

  • 1 tablespoon fresh-squeezed lemon juice
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/2 cup creme fraiche
  • 2 tablespoons dried apricots, finely chopped
  • 4 cups cooked, shredded chicken
  • 3 tablespoons slivered almonds

Instructions

  1. Heat the olive oil in a large skillet on the stove over medium heat. Add shallots, bay leaf, and curry powder; cook for 3 minutes.
  2. Add tomato paste and chicken broth; bring to a simmer.
  3. Add lemon juice, brown sugar, salt, and pepper. Simmer for 2 minutes.
  4. Remove from heat, strain the sauce through a fine mesh strainer into a large bowl.
  5. Add mayonnaise and creme fraiche to the curry sauce; stir until smooth.
  6. Add apricots, chicken, and almonds; toss until coated in the curry sauce.
  7. Serve on butter lettuce, toast, in a baked potato, or as tea sandwiches.
