Ingredients

COFFEE ROLL DOUGH

  • ¼ cup (60mL) warm water
  • 1 and ⅛ teaspoons (4g) dry active yeast or half of one packet
  • ¼ cup (60mL) warm milk
  • 2 and ½ Tablespoons (31g) granulated sugar
  • 1 and ½ Tablespoons espresso powder or instant coffee granules
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg room temperature
  • 2 and ½ to 2 and ¾ cups (300-330g) all-purpose flour
  • 3 Tablespoons (43g) unsalted butter, softened

COFFEE CINNAMON FILLING

  • ¼ cup (50g) granulated sugar
  • ¼ cup (50g) firmly packed light brown sugar
  • 1 and ½ Tablespoons espresso powder or instant coffee granules
  • ½ Tablespoon ground cinnamon
  • 2 Tablespoons (29g) unsalted butter, melted

COFFEE CREAM CHEESE COFFEE FROSTING

  • 2 ounces (56g) cream cheese, softened
  • 2 Tablespoons (28g) unsalted butter, softened
  • ¾ cup (90g) powdered sugar
  • 1 and ½ teaspoons espresso powder or instant coffee granules
  • ⅛ teaspoon salt
  • 1 to 2 Tablespoons liquid for thinning (optional)

Instructions

  1. COFFEE ROLL DOUGH – Spray a baking dish with non-stick spray. Activate yeast in warm water, then add milk, sugar, espresso, salt, vanilla, and egg. Gradually stir in flour and butter. Knead dough until smooth. Rest dough while preparing filling.
  2. COFFEE CINNAMON FILLING – Combine sugars, espresso, and cinnamon. Roll out dough, brush with melted butter, sprinkle filling, roll up, slice, and place in prepared pan. Let rise.
  3. ASSEMBLE AND BAKE THE DOUGH – Preheat oven, bake rolls until lightly browned. Cool before frosting.
  4. COFFEE CREAM CHEESE FROSTING – Beat cream cheese and butter, then mix in sugar, espresso, and salt. Thin frosting if desired. Spread on cooled rolls and serve.

Notes

  • To thin frosting: you can use water, milk/cream, or coffee if you want your frosting to be thinner.
  • Make ahead: this dough can be made ahead of time through step 1 of the ‘assemble and bake dough’ instructions.
  • To freeze: baked rolls freeze well, up to 2-3 months. Thaw overnight in the refrigerator and warm before enjoying.
  • To freeze unbaked rolls: bake the rolls in step 2 in ‘assemble and bake dough’ instructions for 10 minutes at 350°F (177ºC).
