Ingredients

  • 3 tbsp chia seeds
  • 3 tbsp pure maple syrup, divided
  • 1 plum, cut in half, seed removed
  • 1 small pinch of kosher salt

For the Plum Compote:

  • 1 plum, diced
  • 1 tbsp pure maple syrup
  • 1/4 tsp cinnamon
  • 1 small pinch of kosher salt

Instructions

  1. Prepare the Coconut Chia Pudding: Blend coconut milk, chia seeds, 2 tablespoons of maple syrup, 1 plum, and a pinch of salt until thick and creamy. Set aside.
  2. Make the Plum Compote: In a bowl, combine diced plums, 1 tablespoon of maple syrup, cinnamon, and a pinch of salt. Toss until well mixed.
  3. Assemble the Pudding: Layer chia pudding and plum compote in glass jars. Repeat layers. Refrigerate for at least 6 hours or overnight.
