Ingredients

Muffin Batter:

  • 120 grams (½ cup) plain Greek yogurt, room temperature
  • 60 grams (¼ cup) whole milk, room temperature

Cinnamon Swirl/Filling:

  • 113 grams (½ cup) unsalted butter, room temperature
  • 100 grams (½ cup) light brown sugar
  • 1 tablespoon plus 1 teaspoon ground cinnamon

Instructions

  1. Prepare the Batter: Whisk together the flour, baking powder, salt, and cinnamon. Set aside.
  2. Cream Butter and Sugars: Beat together the butter, brown sugar, and granulated sugar until lighter in color and fluffy.
  3. Add Eggs and Flavorings: Mix in the eggs, vanilla extract, and Amoretti Natural Cinnamon Bun Artisan Flavor until combined.
  4. Combine Wet and Dry Ingredients: Alternate adding the dry ingredients and the yogurt/milk to the batter until just combined.
  5. Rest the Batter: Cover the bowl and let the batter rest for 30 minutes.
  6. Make Cinnamon Swirl: Mix the butter, brown sugar, and cinnamon for the filling.
  7. Fill Muffin Tin: Spoon batter into lined muffin tin, pipe cinnamon swirl on top of each muffin.
  8. Bake: Bake at 425F for 8 minutes, then reduce heat to 350F and bake for 13-16 minutes.
  9. Cool and Fill: Cool muffins, then fill with remaining cinnamon filling before serving.
