Ingredients

For the Stuffed Dates:

  • 20 medjool dates
  • 10 whole almonds
  • 1/2 tsp flaked sea salt
  • ⅓ cup chopped peanuts
  • 3 tbsp finely chopped pistachios
  • 3 tbsp shredded coconut
  • ¼ cup peanut butter

For the Chocolate Coating:

  • 6 oz dark chocolate
  • 1 tbsp coconut oil

Instructions

  1. Prepare the Dates: Cut a slit in each date, remove the pit. Stuff 10 dates with almonds and remaining dates with peanut butter and peanuts. Place them on a lined baking sheet.
  2. Make the Chocolate Sauce: Melt chocolate and coconut oil over a double boiler. Dip each date in the chocolate, coat evenly, then top with salt, pistachios, or coconut.
  3. Freeze: Freeze the dates until the chocolate hardens, about 1 hour. Enjoy!
