  • 1/3 cup (65g) cane sugar
  • 1/3 cup (50g) coconut sugar
  • 1/4 cup (60ml) water or coffee
  • 1 tsp vanilla extract
  • 1 cup (124g) gluten-free flour
  • 1/4 cup (20g) cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup (90g) chocolate chips
  • 1/4 cup (30g) chopped walnuts (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  2. Melt the chocolate: In a small bowl, melt the bittersweet chocolate in the microwave for about 60 seconds. Stir until smooth and set aside.
  3. Prepare the batter: In a large mixing bowl, beat together the sugars, oil, water/coffee, and vanilla until frothy. Add the melted chocolate and mix until combined. Add the flour, cocoa powder, salt, and baking powder. Mix until well combined.
