Ingredients

2 zucchini, sliced into 1 cm discs

3 medium potatoes, peeled and sliced into 1 cm half-moons

1 large red onion, thinly sliced

1/3 cup extra virgin olive oil

3 garlic cloves, crushed

3 ripe tomatoes, grated or chopped

2 tablespoons fresh parsley, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Slice the zucchini and potatoes, and thinly slice the red onion.

  3. Place all vegetables into a 30 cm (12-inch) baking tray.

  4. Add the olive oil, garlic, tomatoes, parsley, salt, and pepper. Mix everything well to combine.

  5. Spread the vegetables in a single layer to ensure even roasting.

  6. Bake for 30 minutes.

  7. Remove from the oven, stir, and check for moisture. If dry, add half a cup of water.

  8. Return to the oven and bake for another 30 minutes.

  9. Let the briam cool for 5–10 minutes before serving.

  • Enhance flavor with fresh herbs like dill, mint, or oregano.
  • Adjust olive oil if adding more vegetables.
